Sérgio Fabres Laquini, a resident of Córrego do Ubá in the picturesque region of Castelo, Espírito Santo, took over his family’s property after his father’s passing. With little experience and limited labor, Sérgio faced significant challenges. The region, renowned for its stunning landscapes, rural charm, and cultural significance, is celebrated for its thriving coffee production and opportunities in ecological and sports tourism. The farming traditions of Córrego do Ubá are deeply intertwined with the community’s cultural heritage, emphasizing collaboration and preserving local identity. At Córrego da Cozinha farm, situated at an altitude of 950–1150 meters, Sérgio cultivates specialty coffee under ideal conditions. Since 2017, he and his brother have dedicated themselves to learning about specialty coffee production. In 2018, they planted Catucaí 785/15, Catucaí 2SL, and, more recently, Arará varieties, which have delivered exceptional results in both quality and productivity. By adopting dense planting techniques and systematic pruning, Sérgio has optimized the harvest process.
