The three coffee varietals you will receive in your exploration box all originate from the two hectare farm, La Granada, located in the Hulia region of southern municipality of Acevedo. This is where the Pink Bourbon variety was discovered and cultivated by Gabriel Castaño Sr. and his wife Carmen Motta Piamba. Gabriel and Carmen have six children-five of whom have continued their family legacy and become coffee producers as well.
When Pink Bourbon was discovered by Don Gabriel Castaño, it was virtually unknown, but upon seeding and mastering the plant - Pink Bourbon would prove to be incredibly lucrative. The variety would allow him to obtain an entire plantation of the Pink Bourbon that not only created financial security for himself and his family; but also a highly sought after coffee variety. A huge turn around from Castaño escaping the dangerous coca production world of the 1980’s and dedicating his life to coffee. On La Granada Gabriel and Carmen perfected this wildly distinctive and ambrosial variety- making it accessible for all to enjoy and we are honored to be a part of its distribution.
What makes the Pink Bourbon varietal so special?
The variety itself is incredibly rare due to the double recessive gene that will dictate the color of the ripe cherry. If there are other differently colored plants around, the pink color will be lost along with the specialities that come with the Bourbon if those plants pollinate. This entails that the harvesting process is one that takes time and care from the farmers, who hand pick the perfectly ripe cherries for harvest.
The Castaño Caturra Castillo is one of the naturally processed coffees that comes in the exploration pack. This coffee is a Naturally Processed coffee- which means that the coffee cherries are left out to dry naturally- absent intervention from water or machines to remove the fruit. These beans are especially unique as they are a blend of coffee varieties. The Caturra is a natural variant that belongs to the Bourbon family; while the Castillo is a mix of Caturra and a Timor Hybrid.
The result is an exquisite and dynamic cup of coffee whose flavors pack a sweet punch!
You can expect notes of chocolate cake, cherry and blackberry jam, all packed into a cup that will transport you to a comforting warm bakery.
The second naturally processed coffee is the Castoño Pink Bourbon. This coffee goes through the same processing as the Caturra Castillo- but is only of the Pink Bourbon variety. This is one of our favorite coffees based on taste alone.
Prepare yourself for a burst of flavor in every sip of this coffee.
The Pink Bourbon is like springtime in a cup- full of sweet floral flavors, ripe red grapes and rich fudge. It’s like the color pink in a mug! An absolute game changer in the coffee world- and much of the credit must be given to Don Gabriel for such a delectable coffee bean.
Finally- we have the experimental variety : Castaño Anaerobic Process. This variety is unique from the others due to its anaerobic process. A coffee that has been processed through anaerobic fermentation undergoes oxygen deprivation by being sealed off in pressurized tanks. The lack of oxygen produces lactic acid that gives the coffee its own individualized flavor.
Castaño Anaerobic turned out to be a creamy, rich coffee that carries unique and distinctive flavors thanks to the experimental processing method.
The tasting notes flourish in every cup- giving hints of the tropics, and sunkissed golden raisins. It is truly a coffee experience and remember!
